Courgette and lemon cake

Ingredients

Method

200g grated courgette
150g sugar
125 ml veg oil
200g plain flour
1 beaten egg
1/2 tsp salt
1/2 tsp bicarb soda
1/4 tsp baking powder
1 tsp ground cinnamon
2 tsp lemon zest

Beat oil, sugar courgette and egg together

Add sifted flour, salt, bicarb, and b.powder,then cinnamon and zest

Bake in a lined 1lb loaf tin at 160 for approx 45 mins or till a skewer tests clean.

Cool in tin for 10min then on rack.

Ice when cool mixing icing sugar with lemon juice. Grate lemon zest on top.

Easily doubled for a bigger cake.
